Fish Tacos w/ Mango Slaw
The perfect weeknight meal for two. The whole dish comes together in ~20 minutes and is delicious.
Ingredients
- 1.5 tbsps of The Rub
- 3/4 lb flaky white fish (Cod, or other)
- 3 tbsps of olive oil
- Corn or flour tortillas
- 1 red mango, peeled and thinly sliced
- 4 oz of coleslaw
- 2 tbsps of fresh lime juice
- 1 tbsp of honey
- 1/4 cup of finely chopped cilantro
- 1/4 tsp of salt
- 1/4 tsp of ground pepper
- 1/2 avocado, thinly slice
- Cilantro and fresh lime for garnishing the tacos
Directions
Prepare the mango slaw.
Combine the sliced mango, coleslaw, cilantro, honey, lime juice, salt and pepper in medium bowl.
Mix The Rub and olive oil.
Combine The Rub and 1.5 tbsp of olive oil in a different medium bowl.
Season the fish.
Add the fish to the oil and Rub mixture. Coat all over.
Cook the fish.
Heat remaining olive oil in frying pan over medium heat. Once hot, add the fish. Cook for 3 minutes, flip once, and cook for another 3 minutes. Once cooked through, remove fish to plate.
Heat tortillas to desired warmth.
Or, I mean don't, if you'd prefer worse tasting tacos.
Assemble the tacos.
Add the fish and mango slaw to the tortillas. Garnish with avocado, cilantro and squeeze of fresh lime juice.
